The Vapor-Pressure of Water over Saturated Aqueous-Solutions of Malic, Tartaric, and Citric Acids, at Temperatures from 288-K to 323-K
Vapour pressures of saturated aqueous solutions of DL-malic acid, L(+)-tartaric acid, and citric acid were measured in the temperature range 288 K to 323 K, applying the isoteniscope technique. The water activities, osmotic coefficients, and molar enthalpies of vaporization and of solution at saturation were evaluated from the measured vapour pressures.
