제목 Bioelectronic tongue using multichannel graphene electrode for the detection of sweet and umami taste
초록 The discrimination of taste helps human beings to obtain valuable information about the nature and quality of food. The bioelectric tongues based on graphene were synthesized to simultaneously detect sweet and umami taste. The bioelectric tongues were constructed using multichannel graphene electrodes (MGs) that were functionalized with nanovesicles containing human taste receptors. MGs were used as transducers in a liquid-ion gated field-effect transistor. Field-induced responses from the bioelectronics tongue had superior sensing performance toward target sweeteners with very low concentration (1 uM), which is 2-3 orders of magnitude more sensitive than previously reported taste sensors.
