HIPPE (high internal phase Pickering emulsion) is an emulsion that is stabilized by colloidal particle and contain a high volume fraction of internal phase (>74%). Even with several advantages of HIPPE over typical emulsions, it has been difficult to fabricate stable HIPPE due to the occurrence of phase inversion. We here introduce the new method to achieve stable HIPPEs using deletion attraction between the dispersed droplets and colloidal particles, induced by numerous Poly-ethylene glycol (PEG) molecules in the continuous phase. In this study, we investigate the effect of depletion attraction on the adsorption/desorption of silica particle onto/from the air-water interface and correlate this to the stability/rheological properties of HIPPEs with varying concentration of PEG. |
