Efficient enzyme-catalyzed conversion of water-insoluble substrate using bicontinuous interacially jammed emulsion gels |

Enzyme has been widely used in industrial processes as biocatalysts. Although many of the industries involve oil-soluble reactants, enzymes are usually active in aqueous solutions, making it difficult to react efficiently. Biphasic reaction is representative solution for this problem. For efficient reaction in biphasic solution, the oil-soluble reactant in the oil phase must be transferred to the aqueous phase involving enzymes robustly. However, its limited surface area would inhibit the robust mass transfer of oil-soluble reactants. In this study, we tried to increase the rate of enzymatic reaction using bijel. Because bijel has a much larger interface area than biphasic solution, it was expected to increase the rate of enzymatic reaction. As a result of comparing the initial reaction rates of bijel reaction and biphasic reaction, the rate of bijel reaction was faster 2.25 fold (25 U/ml of enzyme) and 3.57 fold (50 U/ml of enzyme) more than that of biphasic reaction, respectively. |
