Enzymatic-catalyzed Synthesis of Alkylglycosides in Binary and Ternary Systems
Alkyl glucosides are surfactants resulting from the combination of a carbohydrates with a fatty acid by an ester bond. This alkyl glucosides are commercially produced by chemical synthesis, but chemical synthesis generally produce complex mixtures and are required high temperatures and pressures, thus these reaction also lead to colouring of the products. Alkyl glucosides may also be obtained by condensation reactions catalysed by enzymes. Enzymatic reaction have the advantage of taking place at normal temperatures and pressures. Therefore in this paper, we studied enzymatic synthesis of glucose oleate in binary and ternary systems (Brij56/pyridine/water)
