The chemical composition of powdered pumpkin pulp and its application for food purposes
Bambino type pumpkin pulp was shredded to pieces about 10 mm and dried by air convection down to humidity 12% and then by freeze-drying to down to 5%. The product was powdered by using a lab. disc crusher and then studied for chem. compn. in accordance with the relevant stds. A 100 g sample of powdered pulp contained approx. 11 mg of vitamin C, 25 mg of carotenes, as well as K, P, Ca, and Mg, in amts. of approx. 200 mg, 31 mg, 14 mg, and 7.7 mg, resp.
