Effect of cold chain retention on the nutritional value of drinking milk including content of bioactive components
Effect of cooling conditions and time of storage of pasteurized microfiltered and ultra-high drinking milk on its basic compn. and contents of non-denatured whey proteins and fatty acids was studied. In the pasteurized and microfiltered drinking milk, the concn. of bioactive whey proteins was decreased while the content of essential nutrients remained unchanged during 7 days long storage. The maintaining a refrigeration temp. during drinking milk distribution and storage was found necessary to preserve the product quality.
