Sochastic Sensors for the Assay of Biogenic Amines in Wines
New oleamides were used for the design of stochastic sensors based on diamond paste. The stochastic sensors determined three biogenic amines: histamine, putrescine, and cadaverine. The limits of determination and the linear concentration ranges obtained using these new stochastic sensors made possible their utilization for screening of wines for the selected biogenic amines. The new screening method is fast, reliable, and cost effective, and will allow the screening of wines in order to establish their quality based on the quantities of biogenic amines found.
