The optimum conditions of I incubation (temp., time, KI concn.) into bakery yeast (Saccharomyces cerevisiae) were detd. The optimum incubation temp. and time for bioplex were 26,3 degrees C and 11,2-18 h, resp. The highest I concn. in yeast was obtained at 32,4 degrees C and KI concn. 4,5 mM. The I-enriched yeast can be used for prodn. of food supplements and as feed additives.
