The effect of emulsion structure on emulsion's rheological behavior
Kerosene (0.65) and sunflower oil (dispersed phase volume fraction, phi = 0.32 to 0.52) were examined as oil-water emulsions, and data reported for 17 mineral oil emulsions were used to study the effect of droplet size distribution and shear-thinning. At phi > 0.5, the viscous properties were related to Re number For emulsions with phi = 0.52, 0.6, and 0.65, Pal's model (Colloids Surf., Ser. A, 137, 275 (1998)) constants were determined and expressed as linear functions of phi.
