Nano-complex formation of vitamin C with palmitoyl chitosan |
| 초록 |
Oligomeric chitosan was prepared and modified using palmitoyl chloride. The chitosan derivative was exploited for the stabilization of ascorbic acid (AA, vitamin C) through complex formation between anionic AA and cationic palmitoyl chitosan. The resulting complex enhanced the stability of AA in water environment. The preparation of AA complex was nano-sized, and the AA stability was enhanced about 3 folds. |
